Everyone loves tacos, and what’s better than switching up the traditional taco for a delicious FISH taco? With the light and flaky fish baked with smoked paprika and served with a creamy slaw, this is the perfect dish for a night with family and friends.
Fun Fish Tacos
Serves 4 to 6
Ingredients:
1lb Cod fillet
½ Cup Panko Bread Crumbs
2 Tablespoons Cornmeal
1 Tablespoon Smoked Paprika
Olive Oil Spray
½ Cup Avocado Mayonnaise
1 Lime, juice of
1 medium Jalapeño, minced
1 Tablespoon freshly chopped cilantro
Sea Salt
Freshly Ground Pepper
1x 10oz Bag Broccoli Slaw
12 – 16 Corn or flour tortillas, Warm
1 Large avocado, sliced or diced for garnish
1 Large tomato, sliced or diced for garnish
Instructions:
Pre-heat oven to 350’F
Cut the fish into ¾” thick by 3 inch in length slices. Coat the fish by placing the panko, cornmeal and paprika in a plastic zip bag. Add the fish slices a few at a time and shake to coat well. Place the slices on a sheet tray that has been lightly sprayed with olive oil. Then place in the oven to cook for 6 to 8 minutes or until the fish is cooked all the way through, flaky and white.
To make the taco Sauce, add the mayonnaise, lime juice, jalapeños and cilantro to a small bowl and stir to combine. Taste and season with salt and pepper.
To serve:
Place a spoonful of broccoli slaw and one or two pieces of fish in each taco. Top with slices of avocado, tomato and a healthy dollop of sauce.
