Do you love chicken wings, or how about spare ribs? I do, but you know what my new favorite finger food is? Forever Oceans Amberjack™ Collars, yes a mouth full of words but a delicious mouth full of juicy succulent tender bites. Coat with a sticky Asian style sauce and you’ll have your taste buds craving for more and more. Big plus, the collars only need to be lightly seasoned and pan fried or thrown under the broiler for 4 to 6 minutes and you have a luscious, finger-licking meal in as little as ten minutes, that the whole family will love!

Forever Oceans Amberjack™ Collars with Garlic and Ginger Sauce

Serves 4

Collars with Garlic and Ginger Sauce


8x Forever Oceans Amberjack™ Collars


Freshly ground black pepper

2 tablespoons sesame oil


2 inch piece of fresh ginger, peeled and cut into thin matchsticks

6 garlic cloves, peeled and sliced

½ cup chicken stock

½ cup low in sodium soy sauce

2 tablespoons Hoisin sauce (optional)

2 tablespoons local honey

1 tablespoon rice wine vinegar



2 Green onions, roughly chopped

2 tablespoons roasted peanuts or roasted chickpeas

1 teaspoon rice seasoning


How to make:

Season the Forever Oceans Amberjack™ collars. Place a large frying pan or wok on the stove over a medium to high temperature. Add the oil, when hot carefully add the Forever Oceans Amberjack™ collars, cook for 2 to 3 minutes then turn over and continue cooking for another 2 to 3 minutes, when cooked remove from the pan and set aside.


Add the ginger and garlic, cook for 1 minute, then pour in the chicken stock, soy sauce, hoisin (if using), honey and vinegar, bring to a boil. Boil until the sauce thickens to a syrup consistency.


Place the Forever Oceans Amberjack™ collars on a serving dish and pour over the sauce or pour into a bowl and use as a dipping sauce. Garnish the Forever Oceans Amberjack™ collars with the chopped green onions, peanuts and rice seasoning.
