Makes 16 mini tacos

If you think of iconic American tacos, the crispy taco is what most often comes to mind. This crispy style, which also goes by the name of hard-shell tacos or crunchy tacos, is defined by the tortilla fried into a U shape. It is then stuffed with a variety of fillings, mainly meat, lettuce, tomatoes, and spicy salsa. While fast-food renditions have given it a bad reputation, when prepared with love and with care, the classic crispy taco filled with Forever Oceans Kanpachi Poke is a joy to eat with family and friends.

Oil for frying

16 mini flour taco shells

½ cup seaweed, chopped

½ cup green onions, thinly sliced

2 tablespoon fresh cilantro

1 tablespoon pickled ginger, minced

1 tablespoon rice seasoning

1 tablespoon low in sodium soy sauce

1 tablespoon toasted sesame oil

1 tablespoon honey

12oz Forever Oceans Kanpachi Loin, cut into ½ inch cubes

1 cup English cucumber, cut into ¼ inch dice

1 Avocado, stone removed, peeled, flesh chopped

1 medium jalapeno pepper, cut into thin rounds

1 lime, juice of

How to make:

Pour oil into a medium size saucepan (no more than 3 to 4 inches deep). Place the pan on the stove and heat to a temperature of 375’F. Take a tortilla and fold it in half into a “U” shape, holding it with tongs in the center. Using the tongs, carefully dip one half of the tortilla, lengthwise, into the hot oil, leaving the other half out of the oil. Fry the first side until crisp, about 20 seconds, then repeat for the other side, holding the already cooked side out of the oil. Remove the shell from the oil and transfer to a plate lined with a paper towel. Set aside, then repeat with the remaining shells.

Take a medium size bowl and stir the remaining ingredients together. Allow the flavors to infuse for 20 to 30 minutes.

Spoon even amounts of poke into each crisp taco shell, then garnish with any leftover rice seasoning and serve with lime wedges.
