When I think of spring and summer, I think of light colorful dishes full of flavor and nutrition. Dishes that are easy to make, that you can eat outside on the deck or by the pool. Try this amazingly simple Forever Oceans Kanpachi dish, that sparkles with freshness, texture and goodness.


Forever Oceans Kanpachi served with Citrus juice, Avocado & Thai Chili dressing

Serves 4



1lb Forever Oceans Kanpachi, cut into thin slices

2 limes, juice of

1 pink grapefruit, peeled and cut into segments, retain juice

1 avocado, peeled, stone removed, flesh roughly chopped

4 fresh radishes, thinly sliced

1 small Thai chili, seeds removed, flesh roughly chopped

1 tablespoon sesame oil

1 teaspoon fish sauce

1 teaspoon sesame seeds or rice seasoning

A few springs of radish microgreens (optional)

Chopped nuts or Parmesan crisp, broken into small pieces (optional) 


How to make:


Place the sliced Forever Oceans Kanpachi into a medium size bowl.


Take another medium size bowl and combine the rest of the ingredients together apart from the sesame seeds and microgreens. Carefully stir the dressing together.


Pour the dressing over the Forever Oceans Kanpachi, stir to cover, allow to marinate for 5 minutes, then spoon equal amounts of the fish and garnish into four cold bowls. Sprinkle over the sesame seeds and microgreens, serve.
