Independence High School’s advanced Culinary students competed in the North Carolina ProStart Program Competition at North Carolina Central University. Their team ended up taking first place, using our Forever Oceans Kanpachi as the main dish! They had to produce a three course meal only using 2 butane burners within 1 hour:
Appetizer: Fried green tomato with bacon jam and pimento cheese on a bed of microgreens
Main: Pan-seared Kanpachi with braised collard greens, succotash, and a champagne vinegar gastrique
Dessert: Steamed chocolate cake with mascarpone mousse, dark chocolate ganache, macerated strawberries, and candied cacao nibs
