Lightly seared Forever Oceans Kanpachi with Thai Dressing

Serves 4

Ingredients:

1lb Forever Oceans Kanpachi filet or belly, sliced into thin even strips

Salt to taste

2 tablespoons of sesame oil

4 oz of sliced cucumber

4 oz fresh seaweed

1 teaspoon sesame seeds

For the dressing:

4 tablespoons fish sauce

4 tablespoons fresh lime juice

2 tablespoons local honey

1 small Thai chili, seeds removed and flesh cut into thin strips

1 small jalapeno, minced or sliced

1 clove garlic, peeled and minced

How to make:

Place a large frying pan on the stove over a high heat, season the kanpachi slices lightly with salt. Add the oil to the pan, when hot add the Kanpachi slices and very quickly sear only for 30 seconds on both sides. Remove the pan from the heat and place equal amounts of seared Kanpachi onto four large plates. Then place equal amounts of sliced cucumber over the Kanpachi, sprinkle over the seaweed and sesame seeds.

Take a small bowl and whisk all the dressing ingredients together, pour the dressing over the Kanapchi and serve. Serve as an appetizer or add cooked noodles or cooked rice and turn it into an entree.
