From the vast universe of fried seafood, the fried fish sandwich is having its hot moment! Hot fried fish sandwiches have long been staples at many Southern restaurants, but in recent years, the spicy hot variety has popped up in restaurants from New Orleans to New York to California. Spicy meaning a heavy mix of cayenne, paprika, chili peppers, garlic, sriracha and other spices, to make your mouth burn with delight.
Who doesn’t like a fried fish sandwich on a friday afternoon. Work is over for the week, you can hang out with your family or friends. So let’s spice things up a little with a Forever Oceans Hot and Spicy Kanpachi (Amberjack) or lets be in with the in-crowd and call it Nashville-style Hot Kanpachi (Amberjack) Sandwich. Straight from the fryer to the plate or wrap in wax paper and take it to the park or the beach and enjoy this delicacy hot or cold. It will still burn your mouth with tasty goodness and start the weekend on a high note.
For the Fish
Ingredients:
4x 6oz Forever Oceans™ Kanpachi (Amberjack) (or use Cod, Haddock, Pollock)
Sea salt
Freshly ground black pepper
1 cup all purpose flour (plus 1 tablespoon for dusting)
1 teaspoon paprika
1 egg
1 ⅓ cups sprinkling water
2 tablespoon vinegar based hot sauce (Texas Pete or Tabasco)
For the Nashville-Style Hot Sauce
6 YES 6 tablespoons Cayenne pepper
2 Tablespoons brown sugar
1 teaspoon chili powder
1 tsp garlic powder
Oil (enough to cover the bottom of a saucepan) with 3 to 4 inches of oil, heat to a temperature of 350’f.
For the fish, Season each portion of fish with salt and pepper. Take a medium size bowl and add all the dry ingredients, then take a jug and add the egg and water, whisk until incorporated, then slowly pour the liquid into the dry ingredients. Whisk as you pour, until you have a smooth batter.
Check that the oil is at 350’F. Lightly dust each portion of fish with the remaining flour. Then dip each portion of fish into the batter, until well coated. Carefully lower each portion into the hot oil and cook for 6 to 8 minutes or until crisp and golden brown. Carefully remove each portion of fried fish from the oil and place on paper towel to drain.

In a medium size bowl, whisk the Nashville-style hot sauce ingredients together, very carefully whisk in 1 cup of the frying oil. Brush each portion of fish with the spicy oil, then assemble your sandwich.
Forever Oceans Spicy Sauce
½ cup olive oil mayonnaise
1 tablespoon local honey
1 tablespoon hot sauce or sriracha
1 teaspoon Cajun seasoning
Take a small bowl and combine all the ingredients together until you have a smooth spread.
For assembly:
Four soft buns, white or wholewheat, toasted
Tomato slices
Red onion slices
Cucumber slices
Spread (try our spicy sauce or use your favorite)
Coleslaw
To assemble your fish sandwich: Base, spoon on the slaw, then place on the hot fish filet, followed by our spicy sauce (or your own favorite sauce), red onion, tomatoes, cucumber, then top with your bun lid. Enjoy!
