The American Culinary Federation, ACF for short, is a prestigious group of Chef’s throughout the
world that network with each other and offer minimum requirements in multiple areas of the
Culinary/ Hospitality industry to receive ACF certifications.
The organization is based on promoting the professional image of chefs worldwide through
education of culinarians at all levels. ACF is now the largest professional chefs’ organization in
North America. They are made up of more than 14,000 members belonging to more than 170
chapters in four regions across the U.S. Today, ACF is the leader in offering educational
resources, raining, apprenticeship, competitions and programmatic accreditation designed to
enhance professional growth for all current and future chefs and pastry chefs. In addition, ACF
operates the most comprehensive culinary certification program in the world. ACF is home
to ACF Culinary Team USA, the official representative for the United States in major
Normally, the Local Chefs of Charlotte meets up once a month. In the past year they have been
creative on these meetups by offering virtual options and now offer in person, virtual and
Facebook live opportunities to tune in and be part of this great organization. Every year, the
National ACF holds the National Conference, which last month was held in Orlando, Florida.
Over 400 Chefs were in attendance with over 200+ attending virtually.
We are lucky to have a handful of our Forever Oceans Culinary Board be members of the Chefs
of Charlotte, NC chapter. There are 88 members that are currently enrolled here.
The ACF Chefs of Charlotte held their August meetup at the LAB @ Swanson Girard, a culinary
studio and test kitchen in Pineville, NC.
LAB Culinary Director, Chris Aquilino, Chairman of the ACF Chefs of Charlotte Chapter, Jay
Ziobrowski, CEC – “Chef Jay Z” with the help of ACF Chefs of Charlotte VP, Chef Jamie Bostian,
CEC organized the event which ran from 6-8pm. They team demonstrated innovative cooking
techniques and equipment to help reduce foodservice labor, reduce food costs and waste,
while still providing the guest an on-trend, authentic and robust dining experience.
North Carolina produce and proteins were featured on the menu that evening, as well as our show stopping Forever Oceans Kahala.
