Kanpachi Poke

Serves: 4-6

A Hawaiian salad made typically from cubed pieces of raw seafood (but using Hawaiian Kanpachi takes this dish to a new level) marinated with soy sauce, sesame oil and mixed with green onions, freshly grated ginger, then served with your choice of salad ingredients, makes an unbelievably healthy meal the whole family will enjoy.

 

INGREDIENTS:

  • 2 tablespoons red onion, finely diced
  • ¼ cup green onions, chopped
  • ⅓ cup low sodium soy sauce
  • 1 tablespoon local organic honey
  • 1 tablespoon sesame oil
  • 1 teaspoon pickled ginger, minced
  • 12 oz sushi-grade fresh Kanpachi, cut into bite-sized cubes

DIRECTIONS:

1.  In a medium bowl, mix together the red onion, soy sauce, honey, sesame oil, and pickled ginger. Add the cubed Kanpachi, lightly toss to coat, allow to marinate for as little as 20 minutes or up to 2 hours. (Texture should be really firm and chewy with a burgundy red appearance)

2. Using a slotted spoon, lift out the Kanpachi and serve with any of the following recommendations to make a spectacular family dinner:

  • Cooked basmati rice
  • Corn
  • Sliced cucumber
  • Seaweed
  • Green onions
  • Salmon ore
  • Crushed peanuts
  • Sesame seeds
  • Sugar snap peas
  • Lettuce
  • Bean sprouts
